A protein-packed take on the iconic gingerbread cookie, these protein gingerbread cookies taste just like Christmas- cosy, festive, and made for indulging all season long.

Servings: 8 -10 cookies

Ingredients

  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 1 scoop Vanilla ISOPRO Hydrolyzed™ Whey Protein
  • 1 egg
  • 1/4 cup maple syrup (or honey)
  • 1/4 cup olive oil
  • 1 tsp ground ginger
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Optional topping: 1/4 cup turbinado sugar


Directions

  1. Pre-heat & Prep: Preheat the oven to 350°F. Line a baking tray with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk together the maple syrup, egg, olive oil, and vanilla extract until smooth.
  3. Add Dry Ingredients: Add in the almond flour, coconut flour, protein powder, ground ginger, and baking powder. Mix until well combined and dough forms.
  4. Form the cookies: Roll the dough into small balls and flatten them slightly onto the parchment-lined tray, spacing them about 2-3 inches apart. Sprinkle the turbinado sugar on top, if desired.
  5. Bake: Bake for 10-12 minutes, until the edges start to brown.
  6. Finish & Serve: Let cool completely before serving- they will firm up as they cool.

How should I store the cookies?

  • Store in an airtight container at room temperature for up to 7 days. They also freeze well for longer storage.

What other flour can I use? 

  • You can swap the almond and coconut flour for oat flour or all-purpose flour. Keep in mind that some flours are less absorbent, so you may need to adjust quantities and add a splash of milk or water to bring the dough together.

Can I make the dough ahead of time?

  • Yes. The dough can be made in advance and stored in the fridge for up to 3 days, or frozen for up to 3 months, tightly wrapped. If frozen, thaw in the fridge overnight, then let it sit at room temperature for 10–15 minutes before forming and baking.
