Ingredients
- 1 cup almond flour
- 1/3 cup coconut flour
- 1 scoop Vanilla ISOPRO Hydrolyzed™ Whey Protein
- 1 egg
- 1/4 cup maple syrup (or honey)
- 1/4 cup olive oil
- 1 tsp ground ginger
- 1 tsp vanilla extract
- 1 tsp baking powder
- Optional topping: 1/4 cup turbinado sugar
Directions
- Pre-heat & Prep: Preheat the oven to 350°F. Line a baking tray with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk together the maple syrup, egg, olive oil, and vanilla extract until smooth.
- Add Dry Ingredients: Add in the almond flour, coconut flour, protein powder, ground ginger, and baking powder. Mix until well combined and dough forms.
- Form the cookies: Roll the dough into small balls and flatten them slightly onto the parchment-lined tray, spacing them about 2-3 inches apart. Sprinkle the turbinado sugar on top, if desired.
- Bake: Bake for 10-12 minutes, until the edges start to brown.
- Finish & Serve: Let cool completely before serving- they will firm up as they cool.
